Culinary Corner | Introducing Our New Renascence Meat Program

This month, we’re really excited to introduce something that’s been in the works behind the scenes for a while, our new Renascence Group Meat Program.

At its core, this is about going back to what matters most. Quality produce, strong relationships with producers, and a clear connection between where food comes from and how it ends up on the plate. To bring this to life, we’ve partnered with Greenham Farms and Flinders & Co, two suppliers who share our focus on consistency, transparency, and doing things the right way.

All of the meat featured through this program is sourced from Gippsland, a region known for its rich farmland and ideal grazing conditions. It’s the kind of environment that naturally produces meat with depth of flavour, and you can really taste the difference when it’s handled with care from start to finish.

For our chefs, this program opens up even more opportunities to work with ingredients they trust. It means they can focus on creating dishes that highlight the quality of the meat, rather than overworking it. You’ll start to see this reflected across our menus, with simple, thoughtful dishes where the produce is the hero and everything else plays a supporting role.


For guests, it’s about more than just what’s on the plate. It’s about knowing where your food comes from, feeling confident in the quality, and enjoying something that’s been sourced and prepared with intention.
